      @Yamaris Terrero You need three knifes, Chef knife 8-10 inch, Paring knife4-6 inch, and a boning knife 8 inch flexible. With those three knifes you can handle 99% of most kitchen chores. There are some specialty knifes like a butcher knife or a long slicing knife that are good to own too.

    Another way to get the air out of the bag is submerge the bag in water but leave the zipper above the water. The water will push out the air and you can seal the bag while it is submerged. I like using a sous vide machine, so this technique is key!

    We used to cure in a clay crock. The zip lock bags we’re yet to be invented.
    Our Sandwich bags were open ended and made of waxed paper.

    When you pull your tomato plants, save any desent sized green tomatoes by clipping part of the stem with them then put them stem and all into a brown paper bag to ripen. I do that when the growing season is over and they taste great. Just check the bag every few days to pull out and use the ones that ripen before the others. One year when I lived in CT I had fresh tomatoes from my garden for Thanksgiving.
